Food safety is one of the pillars that underpin consumer confidence and the presence of Brazilian animal protein in the most demanding global markets. To discuss the progress and challenges of this agenda, the SIAVS Congress 2026 will promote the Public Health and Sanitary Inspection Panel, bringing together representatives from the Ministry of Agriculture and Livestock (MAPA), industry specialists, researchers, and leading companies in sanitation diagnostic and control.
The panel will be held on August 6 (Thursday), the 9 AM to 12 PM, on Rooms 112 and 113, focusing on new hygiene and sanitation monitoring tools, updated inspection processes, and strengthening food safety throughout the poultry and swine production chain.
The programming will begin at 9 AM, with moderation of Marisete Cerutti, yes Evening, with the presentation of the international case “Hygienic-Sanitary Mapping of the Slaughter Process in the United States”, led by Marcos Sanches, yes bioMérieux. The lecture will showcase international experiences in monitoring industrial processes and the lessons that can contribute to the improvement of Brazilian production.
To 9:30 AM, Daniela Pieroti Ferreira, do MAP, will present the lecture “Current Events in Health Inspection in the Poultry and Swine Chain”, presenting a vision on the evolution of official inspection programs, the main regulatory challenges, and the outlook for strengthening the sanitary safety of national production.
Next, at 10 AM, Letícia Goulart Desordi, yes CRISC/MAPA, will address the topic “Hygienic-Sanitary Monitoring in Chickens: Partial Results and Expectations”, presenting the initial results of the program and its expansion prospects as a tool for managing and continuously improving industrial processes.
After the coffee break, at 11 AM, the program will be closed with a roundtable dedicated to hygienic-sanitary monitoring, gathering Letícia Goulart Desordi (CRISC/MAPA) e Arlei Coldebella (Embrapa Swine and Poultry). The debate will allow for further exploration of the results presented throughout the morning, discussion of prospects for the program's evolution, and answering the main questions from participants regarding its practical application in the industry.
Aimed at veterinarians, quality professionals, industrial managers, inspectors, researchers, and animal protein chain specialists, the panel will provide an updated view of the tools that have been strengthening Brazilian sanitary inspection and contributing to the production of increasingly safe, efficient food that aligns with international market demands.
